soba noodles, steamed kale, steamed asparagus, edamame tossed in peanut sauce with some avocado on top!
this was ready in under fifteen minutes and it was super yummy. :)
nothin’ like a plate of bbq tofu, butternut squash mac ‘n “cheeze”, and steamed kale to cure a bad day.
vegetable gumbo & basmati rice! from this recipe.
vegan lasagna with basil cashew “cheeze” adapted from this recipe. i marinated one small(ish) eggplant, a zucchini, two yellow squash, a red bell pepper, and some kale in balsamic vinegar and some Bragg’s Liquid Aminos then sauteed them with a sweet onion in olive oil, then i followed the recipe’s suggested layering pattern. and topped it with some vegan mozzarella ”cheeze”.
it’s the best vegan lasagna i’ve ever had/made.
